Update!

Just letting every one know...I'm training for a marathon with Jessica! This is going to be a short blog to let everyone know the schedule that I'll be on for the duration of the training.

Cornish Game Hen Recipe:

2 Cornish Hens
2 shakes of Cracked Pepper
2 shakes of Dried Thyme
2 shakes of Dried Rosemary
1 1/2 sticks of butter (real butter)
1/2 Onion
5 to 8 Yukon Gold Potatoes
1 can of Chicken Broth

Mix cracked pepper dried thyme and rosemary with the half stick of butter. Rub the herb/butter mixture over the hens.

Place the hens in at least a 4 inch deep pan with can of chicken broth. Place largely chopped onions in broth on the sides. Half potatoes and place around hens along with the rest of the butter (cubed). Turn oven to 450 F and cook for 1 hour.




Too Fast, Too Fast!!!

Grrr....Christmas has done it again. Sneakily it seems to meander it's way closer until about November it hits you "WHAM!" right in the side of the face while you were thinking, "What am I going to do for Thanksgiving?!" I am just realizing that we have only about 2 weeks left of school until Thanksgiving and then we have exams the week after Thanksgiving, meaning....lots of time off from work because of school and holidays and fewer checks between now and Christmas. Grrr...I knew I should have started my Christmas shopping earlier this year.

I am not however, going to let the fact that I am about as broke as a wagon with no wheels defeat my holiday spirit! I have a couple of surprises up my sleeves and I will concentrate on pulling those off while concentrating on not concentrating on the fact that I'm broke! :)

I have to say that this holiday season has been pretty exciting with the Texas Tech vs. Texas game and Halloween the day right before. By the way I have some great pictures of the pumpkins that my roommates and I carved. I have to say that mine had the smallest pieces to cut out and looked cool, but Natalie's was the neatest looking while Katie's was the cutest looking! (Can't really call a vampire eating someone cute, lol). We saved the pumpkin seeds and I tried baking them but....well...let's just say that they weren't how I remembered!

Overall I feel that I have a lot to be thankful for this year. My family for always being there for me. Matthew for being my friend and listening to me when no one else understands where I'm coming from. To both my roommates who even despite differences I wouldn't trade for anyone simply because they are great people! And to my best friend Jess, who can always make me laugh, is the best person to go shopping with and very exciting to watch football games with and who understands my love of the Twilight Series!

I love you all and am very thankful for all of you being in my life!

Politics

Man it sure does seem like everyone and their goldfish is weighing in on politics nowadays. Personally I think this is great, to a degree. Oh and by the way this is Matthew writing. I think involvement in the political world is the only way we will ever achieve that more perfect union that the founding fathers put forth. With that said, people please stop. When I said that we needed more involvement from society in the political process, I meant intelligent involvement. Well formed opinions backed up with observations and facts, is that really so much to ask? If I get one more "Obama is a Muslim terrorist" bulletin on Myspace I will seriously be unhappy in the extreme. I respect the office of the President regardless, this does not mean that I agree views or policies, in fact the whole point of a representative democracy is to foster differing view points then debating till the public at large speaks. So the public at large has seemingly spoken and through the Electoral College (which is a total farce, but that is another discussion) and elected Barack Obama as the next president. This does not mean that since he is something new and different, or that he can speak publicly better than most can speak privately, we blindly believe he will be better than the last, this is the lack of intelligence I was talking about earlier. On the other hand the individuals that throw out pure idiocy by joining "NoBama" groups or swearing to move to another country for no reason other than they don't like him. Let me set the record straight, if you are considering moving for legitimate reason then by all means continue with your plans, if you fall into the other group then lack of intelligence you haz it. So in short, don't hate the president for no good reason, but don't love him just because he is new and sounds good, hold true to your beliefs don't tell people others are stupid for questioning and look at the facts before speaking. Little more than a rant I know but I felt this was necessary

Oh Happy Day?!?

Hmm...I'm sitting here now trying to decide whether this day is to be considered a good day or a rather unhappy day...

We'll start with the unhappier parts of this day. My alarm clock goes off at 6:30 am this morning and the first words I hear on the radio is that Obama has been elected to be our president. I can honestly say that I didn't really care for either candidate; however, I can cope with McCain's ideas for change better than Obama's. Two major issues I have are the Pro-Choice issue and the Socialized Health Care issue. (I will go into more detail in my next blog about both of these issues but for now I have to make this quick for I have to go to work at 3.) At this point I'm trying to understand how people can't see that Obama's ideas for change could drastically change our way of life. So yes it is a big deal and no people aren't necessarily overreacting. The people who are trying to act as if this will not be the beginning of big change are naive in their thinking whether you voted for or against Obama. Change...whether you feel it is good or bad is in our midst and I feel everyone has the right to react to it. So don't tell me that I'm overreacting because I just happen to have feelings about what this presidential election means.

The Happier part of this day, is that both my Athletic Care and Prevention test is over with along with my Communicable/Chronic Diseases Tests are over! I feel that I did exceptionally well on my ACP test and fairly sure I made an A on the CCD tests (and I do mean tests with an "s" at the end). My professor felt it necessary to give a 3 chapter test on Monday and a 3 chapter test on Wednesday...so wrong of her!
