2 Cornish Hens
2 shakes of Cracked Pepper
2 shakes of Cracked Pepper
2 shakes of Dried Thyme
2 shakes of Dried Rosemary
1 1/2 sticks of butter (real butter)
1/2 Onion
5 to 8 Yukon Gold Potatoes
1 can of Chicken Broth
Mix cracked pepper dried thyme and rosemary with the half stick of butter. Rub the herb/butter mixture over the hens.
Place the hens in at least a 4 inch deep pan with can of chicken broth. Place largely chopped onions in broth on the sides. Half potatoes and place around hens along with the rest of the butter (cubed). Turn oven to 450 F and cook for 1 hour.

For sure for sure! In fact Matthew and I were saying that since I'm having to leave early early Friday morning that we should make that Thursday night after we get back from Thanksgiving.
